Ingredients

4 large russet potatoes

2 tablespoons olive oil

Sea salt, to taste

1 cup shredded cheddar cheese

1 cup sour cream

1 cup cooked bacon bits

1/2 cup chopped green onions

1 cup steamed broccoli florets

1/2 cup diced tomatoes

1/2 cup jalapeños, sliced (optional)

1/4 cup ranch dressing (optional)

Instructions

Preheat your oven to 425°F (220°C).

Scrub the russet potatoes under cold running water to remove any dirt, then dry them with a towel.

Poke each potato several times with a fork to allow steam to escape during baking.

Rub each potato with olive oil and sprinkle with sea salt for added flavor.

Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skins are crispy and a fork easily pierces through the center.

While the potatoes are baking, prepare the toppings by cooking bacon until crispy, steaming the broccoli, and chopping the green onions and tomatoes.

Once the potatoes are done baking, remove them from the oven and let them cool for a few minutes.

Slice the baked potatoes open and fluff the insides with a fork.

Set up a toppings bar by arranging the shredded cheese, sour cream, bacon bits, green onions, broccoli, diced tomatoes, jalapeños, and ranch dressing in bowls for everyone to enjoy.

Serve the baked potatoes warm and let everyone customize their own potato with their favorite toppings.
