Cranberry Apple Pork Tenderloin

1 pound pork tenderloin

1 cup fresh cranberries

1 large apple, cored and diced (preferably Granny Smith)

1/2 cup apple juice

2 tablespoons honey

1 tablespoon Dijon mustard

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Fresh thyme sprigs for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a mixing bowl, combine the diced apple, fresh cranberries, apple juice, honey, Dijon mustard, cinnamon, salt, and pepper. Stir until all ingredients are well mixed. Set aside.

      Heat the olive oil in a large, oven-safe skillet over medium-high heat. Season the pork tenderloin generously with salt and pepper.

        Sear the pork tenderloin in the skillet for about 2-3 minutes on each side, until golden brown.

          Once seared, pour the cranberry-apple mixture over the pork tenderloin in the skillet.

            Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

              Remove the skillet from the oven and let the pork rest for about 5 minutes before slicing it.

                Serve the sliced pork tenderloin with the cranberry-apple sauce spooned over the top.
