6 slices of thick-cut bacon, chopped

1 medium onion, finely chopped

2 cloves garlic, minced

2 cups fresh cranberries

1/2 cup brown sugar

1/4 cup apple cider vinegar

1 teaspoon Dijon mustard

1/2 teaspoon black pepper

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 cup water

In a medium saucepan, cook the chopped bacon over medium heat until crispy. About 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the drippings in the pan.

    Add the chopped onion to the bacon fat in the saucepan and sauté for about 5 minutes, or until the onion is soft and translucent.

      Stir in the minced garlic and cook for an additional minute until fragrant.

        Add the cranberries, brown sugar, apple cider vinegar, Dijon mustard, black pepper, cinnamon, nutmeg, and water to the pan. Stir well to combine.

          Bring the mixture to a boil, then reduce the heat to low. Let it simmer uncovered for about 20-25 minutes, stirring occasionally, until the cranberries burst and the mixture thickens to a jam-like consistency.

            Stir the reserved crispy bacon back into the jam. Season with salt to taste.

              Remove from heat. Allow the jam to cool slightly before transferring it to a clean jar or airtight container.
