Instructions
In a medium bowl, combine the shredded chicken, chopped spinach, dried cranberries, toasted pecans, and diced apples. Toss lightly to mix.
In another small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, salt, and pepper until smooth and well combined.
Pour the dressing over the chicken mixture, and gently fold to coat all the ingredients evenly.
Taste and adjust seasoning if necessary, adding more salt or pepper to suit your preference.
Refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
To serve, place a bed of mixed greens on plates and top with the cranberry pecan chicken salad.
