4 large flour tortillas

8 oz cream cheese, softened

1/2 cup shredded cheddar cheese

1/2 cup cooked and crumbled bacon (or crispy chickpeas for a vegetarian option)

1/4 cup green onions, finely chopped

1/4 cup roasted red peppers, diced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh herbs (parsley or cilantro) for garnish

Instructions
 

In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until smooth and well blended.

    Lay the flour tortillas flat on a clean surface. Spread a generous layer of the cream cheese mixture over each tortilla, leaving about a half-inch border around the edges.

      Evenly distribute the crumbled bacon (or crispy chickpeas), green onions, and roasted red peppers over the cream cheese layer on each tortilla.

        Starting from one edge, tightly roll each tortilla into a log shape. Use a little cream cheese on the edge to seal the roll.

          Once all tortillas are rolled, wrap them tightly in plastic wrap and refrigerate for at least 30 minutes to firm up.

            Preheat the oven to 375°F (190°C). Remove the plastic wrap and slice each rolled tortilla into bite-sized pieces, about 1-2 inches thick.

              Arrange the sliced bites on a baking sheet, cut side up, and bake for 10-12 minutes until slightly golden and the cheese is melty.

                Once baked, remove from the oven and let cool for a few minutes. Garnish with fresh herbs before serving.
