2 chicken breasts, diced

2 cups fresh mushrooms, sliced (such as cremini or button)

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the diced chicken breasts and season with salt, pepper, and paprika. Cook until browned on all sides, about 6-8 minutes. Remove the chicken and set aside.

    In the same skillet, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

      Add the sliced mushrooms to the skillet, sprinkle in the dried thyme, and cook until the mushrooms are tender and have released their moisture, about 5-7 minutes.

        Pour in the chicken broth, stirring to combine; let it simmer for 3-5 minutes to reduce slightly.

          Lower the heat and stir in the heavy cream, mixing well. Return the cooked chicken to the skillet and simmer everything together for another 5-10 minutes until the chicken is cooked through and the sauce has thickened to your liking.

            Adjust seasoning with additional salt and pepper as needed.

              Serve hot, garnished with freshly chopped parsley for a pop of color.
