4 bone-in pork chops (about 1 inch thick)

Salt and black pepper, to taste

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz fresh mushrooms, sliced (cremini or button mushrooms work well)

1 teaspoon dried thyme

1 cup chicken or vegetable broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Pork Chops: Pat the pork chops dry with paper towels and season both sides with salt and black pepper.

    Sear the Pork Chops: In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side, until they are golden brown. Remove them from the skillet and set aside.

      Sauté Onion and Garlic: In the same skillet, add the chopped onion. Sauté for about 3-4 minutes, until softened. Add the minced garlic and cook for an additional minute until fragrant.

        Cook the Mushrooms: Stir in the sliced mushrooms and thyme. Cook until the mushrooms are browned and have released their moisture, about 5-7 minutes.

          Add Broth and Cream: Pour in the chicken or vegetable broth, scraping up any brown bits from the bottom of the skillet. Add the heavy cream, Dijon mustard, and Worcestershire sauce, stirring to combine.

            Simmer and Add Pork Chops: Return the seared pork chops to the skillet, spooning some of the mushroom sauce over them. Reduce the heat to low, cover the skillet, and let everything simmer for about 15-20 minutes, or until the chops are cooked through and tender (internal temperature should reach 145°F).

              Finish and Serve: Once cooked, taste the sauce and adjust the seasoning if necessary. Garnish with chopped fresh parsley and serve hot, alongside your favorite sides like mashed potatoes or steamed vegetables.
