Ingredients
  

12 oz spaghetti or linguine

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

2 tablespoons lemon juice

1/4 cup fresh basil leaves, packed

1/4 cup extra virgin olive oil

Salt and pepper to taste

1/2 cup cherry tomatoes, halved (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Cook the spaghetti or linguine according to package instructions in a large pot of salted boiling water. Reserve 1 cup of pasta water before draining.

    In a food processor, combine the avocados, garlic, lemon juice, and basil. Blend until smooth and creamy.

      With the food processor running, add the olive oil slowly until well combined. If the mixture is too thick, add a bit of the reserved pasta water until desired creaminess is achieved.

        Season the avocado sauce with salt and pepper to taste.

          In the pot used to cook the pasta, combine the drained pasta and avocado sauce, tossing until the pasta is evenly coated. If needed, add more reserved pasta water to loosen the sauce.

            Serve immediately, garnishing each plate with halved cherry tomatoes and, if desired, a sprinkle of grated Parmesan cheese.
