Ingredients

8 oz fettuccine or pasta of your choice

6 strips of bacon, chopped

1 cup mushrooms, sliced (cremini or button)

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, boil salted water and cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta cooking water.

Cook the Bacon: In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Use a slotted spoon to transfer the bacon to a paper-towel-lined plate, leaving the grease in the pan.

Sauté the Mushrooms: In the same skillet with the bacon grease, add sliced mushrooms and cook for about 5 minutes or until they are golden brown. Stir in minced garlic and cook for an additional 1 minute until fragrant.

Make the Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Add the Italian seasoning, salt, and pepper. Allow the sauce to simmer for about 3-4 minutes, then stir in the grated Parmesan cheese until melted and smooth.

Combine Pasta and Sauce: Add the cooked pasta to the skillet with the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached. Toss until the pasta is well coated.

Finish and Serve: Fold the crispy bacon back into the pasta, and adjust seasoning if necessary. Serve hot, garnished with chopped parsley for a fresh touch.
