1 lb (450g) beef sirloin, thinly sliced

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

2 cups beef broth

1 cup sour cream

2 tbsp all-purpose flour

2 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tbsp olive oil

Salt and pepper to taste

12 oz (340g) egg noodles

Fresh parsley, chopped (for garnish)

Cook the Noodles: Start by boiling a large pot of salted water. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the thinly sliced beef sirloin in batches to avoid overcrowding. Cook for about 2-3 minutes per side until browned. Remove the beef from the skillet and set aside.

      Cook the Vegetables: In the same skillet, lower the heat to medium and add the chopped onion and garlic. Sauté for about 2 minutes until softened, then add the sliced mushrooms. Cook for an additional 5-6 minutes until the mushrooms are golden brown.
