8 oz penne pasta

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

½ cup buffalo sauce (mild or hot, depending on preference)

1 cup heavy cream

1 cup shredded cheddar cheese

½ cup cream cheese, softened

2 green onions, sliced (for garnish)

Crumbled blue cheese (optional, for garnish)

Instructions
 

Start by cooking the penne pasta according to the package instructions. Drain and set aside, reserving a cup of pasta water.

    While the pasta is cooking, season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.

      In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes.

        Once the chicken has cooled slightly, shred it using two forks or chop into bite-sized pieces.

          In the same skillet, reduce the heat to medium. Add the buffalo sauce, heavy cream, cream cheese, and half of the cheddar cheese. Stir until the cream cheese is melted and the sauce is smooth and creamy.

            Add the shredded chicken to the skillet, followed by the cooked pasta. Toss everything together, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

              Cook for an additional 2-3 minutes until everything is heated through, and the pasta is coated with the sauce.

                Serve immediately, garnishing with the remaining cheddar cheese, sliced green onions, and crumbled blue cheese if desired.
