Ingredients

12 oz fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

8 oz smoked sausage, sliced

2 tablespoons Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, diced

1 green bell pepper, diced

1 cup chicken broth

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté Vegetables and Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook for about 5-7 minutes until browned. Remove the sausage and set aside.

Build Flavor: In the same skillet, add the chopped onion and bell peppers. Sauté for about 5 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.

Create the Sauce: Sprinkle the Cajun seasoning over the sautéed vegetables and mix well. Pour in the chicken broth and bring to a simmer. Reduce the heat to low and add the heavy cream, stirring constantly to combine.

Incorporate Cheese: Gradually stir in the grated Parmesan cheese until melted and creamy. Season the sauce with salt and pepper to taste.

Combine Everything: Add the cooked fettuccine and browned sausage back into the skillet. Toss everything together to ensure the pasta is well coated with the creamy sauce.

Final Touch: Remove from heat and let it sit for a couple of minutes. The sauce will thicken slightly as it cools.

Serve and Garnish: Spoon the creamy Cajun Alfredo onto plates and garnish with freshly chopped parsley for a pop of color.
