12 ounces fettuccine or penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breast, sliced into strips

1 tablespoon Cajun seasoning (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 medium onion, diced

4 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Season the sliced chicken with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until not longer pink and cooked through. Remove chicken from skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion and sliced red bell pepper. Sauté for about 4 minutes until softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Create the Sauce: Pour in the chicken broth and scrape any browned bits from the bottom of the skillet. Bring to a simmer, then stir in the heavy cream. Allow it to simmer gently for about 3-4 minutes until it starts to thicken.

          Combine: Add the cooked chicken back into the skillet along with drained pasta. Sprinkle in the grated Parmesan cheese and toss everything together until well combined and creamy. Adjust seasoning with more salt, pepper, or Cajun seasoning as desired.

            Garnish and Serve: Remove from heat and garnish with chopped fresh parsley. Serve immediately, enjoying the rich and spicy flavors of this creamy dish.
