12 oz cheese tortellini (fresh or frozen)

2 cups heavy cream

1 cup grated Parmesan cheese

1 cup spinach, roughly chopped

1 cup cherry tomatoes, halved

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish (optional)

Begin by cooking the tortellini according to the package instructions. Drain and set aside once cooked.

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Pour in the heavy cream and bring to a simmer, stirring frequently.

        Gradually add the grated Parmesan cheese to the cream, stirring constantly until melted and smooth. This will create a rich and creamy sauce.

          Stir in the chopped spinach and cherry tomatoes, allowing them to cook for about 3-4 minutes until the spinach wilts and the tomatoes soften.

            Add the cooked tortellini to the skillet, gently tossing until the pasta is coated in the creamy sauce. Season with Italian seasoning, salt, and pepper to taste.

              Remove from heat and let it sit for 2-3 minutes to allow the sauce to thicken slightly.
