9 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup parmesan cheese, grated

1/2 cup basil pesto

1 cup spinach, chopped

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      In a large mixing bowl, combine shredded chicken, ricotta cheese, 1/2 cup mozzarella cheese, 1/4 cup parmesan cheese, chopped spinach, garlic powder, salt, and pepper. Mix well until thoroughly combined.

        Spread a spoonful of basil pesto on each cooked lasagna noodle, followed by a generous amount of the chicken mixture. Roll the noodles tightly from one end to the other.

          In a separate bowl, mix the heavy cream with the remaining basil pesto, and season with salt and pepper.

            In a baking dish, pour a layer of the creamy pesto sauce at the bottom, enough to coat the bottom. Place the rolled lasagna noodles seam-side down in the dish.

              Pour the remaining creamy pesto sauce over the lasagna roll-ups, ensuring they are fully covered. Sprinkle the remaining mozzarella and parmesan cheese evenly on top.

                Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                  Once cooked, let the lasagna roll-ups rest for 5 minutes before serving. Garnish with fresh basil leaves.
