1 lb boneless, skinless chicken breasts, diced

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 can (10 oz) tomato soup

2 cups chicken broth

1 tablespoon taco seasoning

1 teaspoon cumin

½ teaspoon smoked paprika

1 cup cream cheese, softened

1 cup shredded cheddar cheese

Salt and pepper to taste

Fresh cilantro for garnish

Tortilla chips for serving

Instructions
 

In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.

    Stir in the minced garlic and diced chicken, cooking until the chicken is no longer pink, about 5-7 minutes.

      Add the black beans, corn, diced tomatoes with green chilies, tomato soup, chicken broth, taco seasoning, cumin, and smoked paprika. Stir well to combine.

        Bring the mixture to a simmer, reducing the heat slightly. Cook uncovered for about 15-20 minutes, allowing the flavors to meld.

          Once the soup has simmered, add the softened cream cheese. Stir continuously until the cream cheese is fully melted and incorporated.

            Gradually mix in the shredded cheddar cheese, stirring until the cheese is melted and the soup is rich and creamy.

              Season with salt and pepper to taste. If desired, add a little more taco seasoning for extra flavor.

                Serve the soup hot, garnished with fresh cilantro and accompanied by tortilla chips for a delightful crunch.
