1 pound potato gnocchi

8 ounces chorizo sausage, casing removed and crumbled

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup cherry tomatoes, halved

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (optional)

1 cup baby spinach

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

Fresh basil leaves for garnish

Salt and pepper to taste

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions until they float to the surface, usually about 2-3 minutes. Drain and set aside.

    Brown the Chorizo: In a large skillet, heat the olive oil over medium heat. Add the crumbled chorizo and cook until browned and cooked through, about 5-7 minutes. Remove the chorizo from the skillet and set aside, leaving the drippings in the pan.

      Sauté Vegetables: In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Make the Cream Sauce: Pour in the heavy cream and stir in the smoked paprika and red pepper flakes (if using). Bring to a gentle simmer, allowing it to thicken slightly, about 3-5 minutes.

          Combine: Add the halved cherry tomatoes and baby spinach to the cream sauce, stirring until the spinach wilts. Then, add the cooked chorizo back to the skillet, and stir to combine.

            Add Gnocchi: Gently fold in the cooked gnocchi and sprinkle in the grated Parmesan cheese. Mix until the gnocchi is well coated in the creamy sauce. Season with salt and pepper to taste.

              Serve: Plate the creamy chorizo gnocchi and garnish with fresh basil leaves and additional Parmesan if desired.
