Ingredients

4 salmon fillets (about 6 oz each)

1 tablespoon olive oil

Salt and pepper to taste

8 oz mushrooms, sliced (button or cremini work well)

4 cloves garlic, minced

1 cup heavy cream

1 teaspoon Dijon mustard

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.

Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy. Flip the fillets and cook for an additional 2-3 minutes until just cooked through. Remove from the skillet and transfer to a plate.

Cook the Mushrooms and Garlic: In the same skillet, add the sliced mushrooms and sauté for 3-4 minutes until they are golden brown. Add the minced garlic and sauté for another minute until fragrant, being careful not to burn it.

Make the Creamy Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the Dijon mustard, thyme, and lemon juice. Let the sauce simmer gently for about 5 minutes until it thickens slightly. Season with additional salt and pepper to taste.

Combine the Ingredients: Return the seared salmon to the skillet, spooning the creamy mushroom sauce over the top. Let it simmer for an additional minute to heat through.

Serve: Plate the salmon, generously drizzling with the creamy garlic mushroom sauce.

              Prep Time: 10 mins | Total Time: 25 mins | Servings: 4
