8 oz rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 bell pepper, diced (red or yellow)

1/2 red onion, finely chopped

1 cup black olives, sliced

1 cup mozzarella balls, halved

1/2 cup grated Parmesan cheese

1 cup cooked and crumbled Italian sausage (optional)

1 cup mayonnaise

1/4 cup sour cream

2 tbsp red wine vinegar

1 tbsp olive oil

2 tsp Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Cook Pasta: In a large pot of boiling salted water, cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside in a large mixing bowl.

    Prepare Vegetables: While the pasta is cooling, prepare the vegetables. In a separate bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, black olives, and mozzarella balls.

      Mix Dressing: In a small bowl, whisk together mayonnaise, sour cream, red wine vinegar, olive oil, Italian seasoning, salt, and pepper until smooth and well combined.

        Combine Ingredients: Add the vegetable mixture to the bowl with the cooled pasta. If using, add the cooked and crumbled Italian sausage. Pour the dressing over the salad and gently toss everything together until evenly coated.

          Chill: Cover the pasta salad with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld and to chill.
