Ingredients

8 oz fettuccine or linguine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

1 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

1/4 cup fresh basil, chopped (plus more for garnish)

Juice of 1 lemon

Zest of 1 lemon

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

Sauté the Shrimp: In a large skillet over medium heat, add 2 tbsp of olive oil. Once hot, add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side or until pink and opaque. Remove the shrimp from the skillet and set aside.

Make the Cream Sauce: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Stir in the heavy cream, red pepper flakes, and lemon juice. Bring the mixture to a gentle simmer.

Incorporate the Tomatoes: Add the halved cherry tomatoes to the skillet and cook for another 2-3 minutes until they soften.

Combine Everything: Stir in the Parmesan cheese until melted, then add the cooked pasta and shrimp back into the skillet. Toss everything together, adding reserved pasta water a little at a time to reach desired creaminess.

Final Touches: Add lemon zest and chopped basil. Adjust seasoning with more salt and pepper to taste.

Serve: Plate the pasta and garnish with extra basil and a sprinkle of Parmesan cheese. Enjoy your romantic dish!
