1 cup orzo pasta

2 cups vegetable broth

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (e.g., cremini or button)

1 teaspoon dried thyme

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium saucepan, bring the vegetable broth to a simmer. Add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Once cooked, drain and set aside.

    While the orzo cooks, heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.

      Stir in the minced garlic and sliced mushrooms; cook for another 5-6 minutes, or until the mushrooms are golden brown and have released their moisture.

        Add the dried thyme and stir for an additional minute to toast the herbs.

          Reduce the heat to low, and stir in the heavy cream and Parmesan cheese. Mix until the cheese has melted and the sauce is creamy and well combined.

            Add the drained orzo to the skillet with the creamy mushroom mixture. Toss gently to combine, and season with salt and pepper to taste.

              Allow the dish to heat through for about 2-3 minutes while stirring occasionally.

                Serve hot, garnished with freshly chopped parsley for added flavor and a pop of color.
