2 cups fresh mushrooms (such as cremini or button), sliced

2 tablespoons olive oil

2 tablespoons unsalted butter

3 cloves garlic, minced

1 shallot, finely chopped

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon soy sauce (low sodium)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

In a large skillet, heat the olive oil and butter over medium heat until melted and bubbling.

    Add the chopped shallot and minced garlic, sautéing for about 2 minutes until fragrant and translucent.

      Stir in the sliced mushrooms and cook for 5-7 minutes, allowing them to brown and release their moisture.
