12 oz pasta (fettuccine or penne work well)

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional)

Fresh basil leaves, for garnish

Zest of 1 lemon

Juice of 1/2 lemon

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1 cup of the pasta cooking water, then drain the rest and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add olive oil. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook until they start to burst, approximately 3-4 minutes. Then, stir in the fresh spinach and cook until wilted.

        Combine Ingredients: Reduce the heat to low and return the cooked chicken to the skillet. Add the ricotta cheese, Parmesan cheese, and red pepper flakes (if using). Stir well to combine, adding reserved pasta water a little at a time until you reach your desired creaminess.

          Mix with Pasta: Add the cooked pasta to the skillet and toss everything together. Zest the lemon over the pasta, then squeeze in the lemon juice for brightness. Season with salt and pepper to taste.
