2 cups pasta (penne or fettuccine)

1 lb chicken breast, diced

1 cup ricotta cheese

1 cup heavy cream

1 cup spinach leaves, fresh

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1/2 teaspoon red pepper flakes

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup grated Parmesan cheese

Fresh basil leaves for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta water, then drain and set aside.

    Prepare Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken and season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.

      Make Creamy Sauce: In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Add cherry tomatoes and red pepper flakes; sauté until the tomatoes are softened, about 3-4 minutes.

        Combine Ingredients: Reduce heat to low. Stir in the ricotta cheese and heavy cream, mixing until combined and creamy. If the sauce is too thick, gradually add reserved pasta water until desired consistency is achieved.

          Add Spinach and Chicken: Stir in the fresh spinach until wilted, then add the cooked chicken back into the skillet. Mix all together and let simmer for another 2-3 minutes.

            Toss with Pasta: Add the drained pasta to the skillet and toss everything together. Stir in grated Parmesan cheese, adjusting seasoning with more salt and pepper if needed.

              Serve: Plate the pasta and garnish with fresh basil leaves. Optionally, sprinkle more Parmesan cheese on top for added flavor.
