12 oz rigatoni pasta

1 lb Italian sausage (mild or hot, casing removed)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken or vegetable broth

1 cup grated Parmesan cheese

½ teaspoon red pepper flakes (optional)

2 cups fresh spinach

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package directions until al dente. Drain and set aside.

    Brown the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon. Cook until browned and fully cooked, about 5-7 minutes. Remove the sausage from the skillet and transfer it to a plate.

      Sauté the Aromatics: In the same skillet, add the chopped onion and cook for about 3-4 minutes until translucent. Add the minced garlic and red pepper flakes (if using) and sauté for an additional minute until fragrant.
