12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy, based on preference), casing removed

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

1 cup heavy cream

2 cups fresh spinach, roughly chopped

1 teaspoon dried basil

1 teaspoon onion powder

Salt and pepper to taste

½ cup grated Parmesan cheese (plus more for serving)

Fresh basil leaves for garnish (optional)

Instructions
 

Cook the Rigatoni: In a large pot, bring salted water to a boil. Add the rigatoni and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Brown the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage to the skillet, breaking it apart with a wooden spoon as it cooks. Sauté until well browned and cooked through, about 5-7 minutes. Drain excess fat if needed.

      Sauté Garlic and Tomatoes: Add the minced garlic to the skillet and cook for about 1 minute, until fragrant. Then, add the diced tomatoes (with juices) and bring to a simmer. Cook for another 3-5 minutes until slightly thickened.

        Make It Creamy: Lower the heat and stir in the heavy cream, dried basil, onion powder, salt, and pepper. Allow the sauce to simmer gently for 3-4 minutes, stirring occasionally.

          Combine Pasta and Spinach: Add the cooked rigatoni to the skillet, tossing it in the creamy sauce until well coated. If the sauce seems too thick, add reserved pasta water a little at a time to reach the desired consistency. Fold in the chopped spinach and allow to wilt.

            Finish with Cheese: Stir in the grated Parmesan cheese until melted and creamy. Taste and adjust the seasoning if needed.

              Serve: Dish out the creamy sausage rigatoni into bowls, top with extra Parmesan cheese, and garnish with fresh basil leaves if desired. Enjoy your meal!
