4 boneless, skinless chicken thighs

1 cup arborio rice

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

1 cup frozen peas

1 cup chopped spinach (fresh or frozen)

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken thighs with salt, pepper, and smoked paprika.

    Sear the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken thighs and sear until golden brown on both sides, about 5-6 minutes per side. Once done, remove the chicken and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and garlic. Sauté until soft and translucent, about 3-4 minutes.

        Add Rice: Stir in the arborio rice, ensuring it is well-coated with the oil and mixed with the onion and garlic. Toast for about 2 minutes.

          Combine Ingredients: Pour in the chicken broth and bring to a gentle boil. Return the chicken thighs to the skillet. Cover and reduce heat to low, allowing to simmer for 20 minutes.

            Creamy Mixture: After the chicken has cooked through, remove it again and set aside. Stir in the heavy cream, frozen peas, and chopped spinach into the skillet. Mix well.

              Finalize Cooking: Place chicken back into the skillet and allow everything to simmer for an additional 5-7 minutes on low heat, until the sauce thickens slightly.

                Serve: Remove from heat and garnish with fresh parsley before serving.
