Creamy Sun Dried Tomato Chicken Pasta

Ingredients
  

8 oz fettuccine or pasta of choice

2 tablespoons olive oil

2 boneless, skinless chicken breasts, sliced

Salt and pepper, to taste

3 cloves garlic, minced

1 cup sun dried tomatoes, chopped (in oil or packed in water)

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

A pinch of red pepper flakes (optional, for heat)

Fresh basil or parsley for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain the pasta and set aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the sliced chicken breasts with salt and pepper. Add the chicken to the skillet and cook until browned and cooked through, about 6-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté the Garlic and Tomatoes: In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the chopped sun dried tomatoes and cook for 2 more minutes.

        Make the Sauce: Pour in the heavy cream, stirring to combine. Let it simmer for a couple of minutes, then add the grated Parmesan cheese, Italian seasoning, and red pepper flakes if using. Stir until the cheese is melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water to reach desired consistency.

          Combine Everything: Add the cooked chicken and drained pasta to the skillet. Toss everything together until the pasta is well coated in the creamy sauce.
