2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

1 cup vegetable broth

1 teaspoon sugar

1 teaspoon dried oregano

Salt and pepper to taste

1 cup heavy cream (or coconut cream for a dairy-free option)

1 cup fresh basil leaves, chopped

Optional: Parmesan cheese for garnish

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Pour in the crushed tomatoes and vegetable broth. Add sugar and dried oregano, stirring to combine. Season with salt and pepper to taste.

        Bring the mixture to a gentle simmer and let it cook for 15-20 minutes to deepen the flavors, stirring occasionally.

          Once the soup has simmered, use an immersion blender to puree it until smooth. Alternatively, you can carefully transfer the soup in batches to a blender.

            Return the blended soup to the pot over low heat. Stir in the heavy cream and chopped basil, allowing it to warm through for about 5 minutes. Adjust seasoning if needed.
