Ingredients

1 pound medium shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish

Lemon wedges, for serving

Instructions

Sauté the Shrimp: In a large skillet over medium-high heat, add the olive oil. Once hot, add the shrimp and sauté for about 2-3 minutes or until they turn pink and opaque. Season with salt and pepper. Remove the shrimp from the skillet and set aside.

Cook the Garlic: In the same skillet, reduce heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant.

Add Vegetables: Stir in the cherry tomatoes and cook for 2-3 minutes until they start to soften. Add the baby spinach and cook until wilted.

Make the Cream Sauce: Pour in the heavy cream and mixed with Italian seasoning. Stir well and let it simmer for 2-3 minutes until the sauce thickens slightly.

Combine: Lower the heat and add the grated Parmesan cheese. Stir until melted and smooth. Return the sautéed shrimp to the skillet and toss to coat them in the creamy sauce. Cook for an additional 1-2 minutes to heat through.

Serve: Remove from heat and garnish with fresh basil. Serve immediately with lemon wedges on the side for an extra burst of flavor.
