1 lb (450g) large prawns, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach (or kale)

1 cup heavy cream

½ cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Zest of 1 lemon

Juice of ½ lemon

Cooked pasta or crusty bread, for serving

Instructions
 

Cook the Prawns: In a large skillet, heat the olive oil over medium-high heat. Add the prawns and season with salt and pepper. Cook for about 2-3 minutes per side, or until the prawns are pink and opaque. Remove from the skillet and set aside.

    Sauté Garlic and Tomatoes: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and Italian seasoning, cooking for an additional 2-3 minutes until the tomatoes start to soften.

      Add Spinach: Stir in the fresh spinach and cook until wilted, about 1-2 minutes.

        Prepare the Cream Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Sprinkle in the Parmesan cheese, stirring until melted and creamy. Add lemon zest and lemon juice for brightness.

          Combine Prawns and Sauce: Return the cooked prawns to the skillet and gently mix until they are well-coated in the creamy sauce. Allow it to simmer for another 2-3 minutes for the flavors to meld. Adjust seasoning with salt and pepper, as needed.

            Serve: Divide the creamy Tuscan prawns among plates, garnishing with fresh basil. Serve alongside cooked pasta or with slices of crusty bread to mop up the luxurious sauce.
