16 oz fresh cheese ravioli (store-bought or homemade)

2 tablespoons olive oil

3 cloves garlic, minced

1 small yellow onion, diced

1 cup cherry tomatoes, halved

2 cups baby spinach

1 cup heavy cream

3/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish

Cook the Ravioli: In a large pot of salted boiling water, cook the ravioli according to package instructions. Once done, drain and set aside, reserving a bit of pasta water.

    Sauté Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add diced onion and sauté for about 3-4 minutes until softened. Add minced garlic and cook for an additional 1 minute until fragrant.

      Add Vegetables: Stir in the cherry tomatoes and Italian seasoning, cooking for about 3-4 minutes or until the tomatoes start to soften.

        Incorporate Spinach: Add the baby spinach to the skillet, stirring until the leaves wilt, about 2 minutes.

          Create Creamy Sauce: Pour in the heavy cream, stirring to combine. Allow it to simmer gently for 3-4 minutes until slightly thickened. Stir in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, add a bit of reserved pasta water until desired consistency is reached.

            Combine Ravioli and Sauce: Gently fold the cooked ravioli into the creamy Tuscan sauce, ensuring that all the ravioli are well-coated. Season with salt and pepper to taste.

              Serve: Remove from heat and serve immediately, garnished with fresh basil and additional Parmesan cheese if desired.
