4 salmon fillets

2 tablespoons olive oil

Salt and pepper to taste

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Zest of 1 lemon
