Begin by heating a generous amount of extra virgin olive oil in a large skillet over medium heat. The choice of olive oil is crucial, not only for flavor but also for its health benefits. Allow the oil to heat until it shimmers, which indicates that it’s ready for sautéing. The right temperature ensures that the shrimp will sear beautifully, developing a golden crust while remaining juicy inside. Avoid overheating the oil, as it can lead to burnt flavors and diminish the overall taste of the dish.

Ingredients

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil for garnish

Instructions

In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

Add the shrimp to the skillet in a single layer and cook for 2-3 minutes on each side, or until they are pink and cooked through. Remove the shrimp from the skillet and set aside.

In the same skillet, add the halved cherry tomatoes and sauté for 2-3 minutes until they start to soften.

Add the baby spinach and cook for another minute until wilted.

Pour in the heavy cream and stir to combine. Bring to a gentle simmer.

Add the grated Parmesan cheese and Italian seasoning, stirring until the cheese melts and the sauce thickens slightly. Season with salt and pepper to taste.

Return the cooked shrimp to the skillet and toss to coat in the creamy sauce. Cook for an additional minute to heat through.

Remove from heat and garnish with fresh basil before serving.
