8 oz linguine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest. Set aside.

    Prepare the shrimp: In a large skillet, heat olive oil over medium-high heat. Add the shrimp, seasoning with salt, pepper, and Italian seasoning. Cook for 2-3 minutes on each side until the shrimp turn pink and opaque. Remove from the skillet and set aside.

      Sauté aromatics: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Toss in the cherry tomatoes and cook for 3-4 minutes, or until they soften.

        Create the sauce: Reduce the heat to medium-low, then pour in the heavy cream and stir well. Add the Parmesan cheese, stirring until melted and combined. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.

          Combine: Add the cooked shrimp and baby spinach to the skillet, mixing until the spinach has wilted. Fold in the drained linguine, tossing everything together until well combined and heated through.

            Serve: Plate the creamy Tuscan shrimp linguine and garnish with fresh basil leaves. Enjoy your delightful meal!
