1 ½ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

½ cup heavy cream

½ cup milk

1 cup granulated sugar (for caramelizing)

Fresh berries or mint leaves for garnish

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set this dry mixture aside.

      In a large bowl, beat the softened butter and sugar together until light and fluffy using an electric mixer (about 3-5 minutes).

        Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

          Gradually add the dry ingredients to the wet mixture, alternating with the heavy cream and milk. Start and finish with the dry ingredients, mixing until just combined.

            Pour the batter into the prepared cake pan and smooth the top with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

                  Once the cake is completely cool, place it on a heatproof serving plate.

                    Evenly sprinkle the 1 cup of granulated sugar over the top of the cake.

                      Using a kitchen torch, carefully caramelize the sugar until it forms a golden, crunchy crust. Be sure to move the torch in a circular motion to avoid burning any one area. If you don’t have a torch, you can place the cake under the broiler for a few minutes (keeping a close eye on it) until the sugar melts and bubbles.

                        Allow the caramelized top to cool and harden for about 5 minutes before slicing.
