Ingredients

For the Crust:

1 cup graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1/2 cup sour cream

For the Crème Brûlée Topping:

1/4 cup granulated sugar (for caramelizing)

1 teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Crust:

    - Preheat your oven to 325°F (160°C). Line a cupcake pan with cupcake liners.

      - In a medium mixing bowl, combine the graham cracker crumbs and granulated sugar. Stir in the melted butter until the mixture resembles wet sand.

        - Press about a tablespoon of the mixture into the bottom of each cupcake liner to form a crust. Bake for 5 minutes, then remove from the oven and let cool.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese until smooth and creamy, about 2-3 minutes.

              - Gradually add the granulated sugar and continue to beat until well incorporated. Add the vanilla extract and mix well.

                - Beat in the eggs, one at a time, making sure each egg is fully combined before adding the next.

                  - Finally, add the sour cream and mix until smooth.

                    Assemble the Cupcakes:

                      - Divide the cheesecake filling evenly among the prepared crusts, filling each liner about 3/4 full.

                        - Bake in the preheated oven for 20-25 minutes, or until the centers are set but slightly jiggly.

                          Cool and Chill:

                            - Remove the cheesecake cupcakes from the oven and let them cool at room temperature for about 30 minutes. Then, refrigerate for at least 2-3 hours (or overnight) until fully chilled.

                              Prepare the Crème Brûlée Topping:

                                - In a small bowl, combine the granulated sugar, vanilla extract, and a pinch of salt.

                                  - Once the cupcakes are fully chilled, sprinkle a thin layer of the sugar mixture over the top of each cheesecake cupcake.

                                    Caramelize the Sugar:

                                      - Using a kitchen torch, carefully caramelize the sugar until it melts and forms a crispy, golden crust. If you don’t have a torch, you can place the cupcakes under a broiler in your oven for about 1-2 minutes, but watch them closely to avoid burning.

                                        Serve:

                                          - Allow the sugar topping to cool and harden for a minute before serving. Enjoy your decadent Crème Brûlée Cheesecake Cupcakes!
