In a medium mixing bowl, toss the dried chickpeas with olive oil, paprika, garlic powder, cumin, salt, black pepper, and cayenne pepper (if using) until evenly coated.
Place the seasoned chickpeas in the air fryer basket in a single layer. Ensure they aren’t overcrowded for better crispiness.
Cook the chickpeas in the air fryer for 15-20 minutes, shaking the basket halfway through the cooking time to ensure even cooking.
Once they're golden brown and crispy, remove them from the air fryer and let them cool for a few minutes. They’ll become even crunchier as they cool.
Taste and adjust the seasoning if necessary.
