1 pound salmon fillet, skinless and boneless

1 cup panko breadcrumbs

1/2 cup flour

2 large eggs

1 tablespoon cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 teaspoon lime juice

Fresh cilantro or green onions for garnish

Prepare the Salmon: Cut the salmon fillet into bite-sized pieces (about 1-inch cubes). Pat them dry with paper towels to remove excess moisture.
