2 cups cooked chicken, shredded

1 cup cream cheese, softened

1 cup cheddar cheese, shredded

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

10-12 small corn tortillas

Oil for frying

Optional toppings: guacamole, sour cream, salsa, chopped cilantro

In a large mixing bowl, combine the shredded chicken, cream cheese, cheddar cheese, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Mix well until everything is blended and creamy.

    Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are warm and pliable. This prevents them from cracking when rolled.

      Spoon approximately 2-3 tablespoons of the chicken mixture onto the lower third of each tortilla. Roll the tortilla tightly around the filling, keeping it snug but not overly tight. Secure with a toothpick if needed.

        In a large frying pan, heat about 1 inch of oil over medium-high heat. To test if the oil is ready, drop in a small piece of tortilla; it should sizzle immediately.

          Carefully place 3-4 taquitos in the hot oil, seam-side down. Fry for 3-4 minutes, or until they are golden brown and crispy, turning them occasionally for even cooking.

            Using tongs, remove the taquitos from the oil and place them on a plate lined with paper towels to drain excess oil.

              Repeat until all taquitos are fried.

                Serve hot with optional toppings like guacamole, sour cream, salsa, and chopped cilantro.
