4 medium russet potatoes, peeled and diced

1 pound Polish sausage, sliced into rounds

1 medium onion, diced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

½ teaspoon black pepper

Salt to taste

3 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Start by boiling diced potatoes in a pot of salted water for about 5-7 minutes, until just tender but not falling apart. Drain and let them cool slightly.

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced Polish sausage and cook until browned and crispy on both sides, about 4-5 minutes. Remove the sausage from the skillet and set aside.

      In the same skillet, add the diced onions and sauté for 3-4 minutes until they become translucent.

        Add minced garlic, smoked paprika, dried thyme, and black pepper to the skillet. Cook for an additional 1-2 minutes, stirring frequently to avoid burning the garlic.

          Increase the heat to medium-high and add the parboiled potatoes to the skillet. Pour in the remaining tablespoon of olive oil, season with salt, and stir everything together. Spread the potatoes evenly in the skillet.

            Let the potatoes cook for about 8-10 minutes without stirring, allowing them to achieve a beautiful golden-brown crust. After 10 minutes, gently toss the potatoes to cook on all sides, cooking for another 5-7 minutes until crispy.

              Finally, stir the cooked sausage back into the skillet with the crispy potatoes. Allow them to warm together for 2-3 minutes.

                Once everything is sizzling and aromatic, remove from heat and garnish with freshly chopped parsley before serving.
