Ingredients

For the Chicken:

1 lb (450g) chicken thighs, boneless and skinless

1 cup buttermilk

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon paprika

1 cup all-purpose flour

1/2 cup cornstarch

Oil for frying (vegetable or peanut oil)

For the Hot Honey Sauce:

1/2 cup honey

2 tablespoons hot sauce (adjust to taste)

1 tablespoon apple cider vinegar

1 teaspoon chili flakes (optional, for extra heat)

For Garnish:

Fresh parsley, chopped

Sesame seeds (optional)

Instructions

Marinate the Chicken:

    - In a large bowl, combine the buttermilk, salt, black pepper, garlic powder, and paprika. Add the chicken thighs, ensuring they are completely submerged. Cover and refrigerate for at least 1 hour (or overnight for best results).

      Prepare the Breading:

        - In a separate shallow dish, mix together the flour and cornstarch. Remove the chicken from the marinade, allowing any excess to drip off, then dredge each piece in the flour mixture, ensuring an even coating. Set aside on a wire rack for 10 minutes to let the coating adhere.

          Make the Hot Honey Sauce:

            - In a small saucepan, combine the honey, hot sauce, apple cider vinegar, and chili flakes over medium heat. Stir until the mixture is well combined and slightly heated through (about 2-3 minutes). Remove from heat and set aside.

              Fry the Chicken:

                - In a deep skillet or pot, heat about 1 inch of oil over medium-high heat (350°F or 175°C). Carefully add the breaded chicken pieces in batches, being careful not to overcrowd the pan. Fry for about 5-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

                  Coat the Chicken:

                    - Once cooked, remove the chicken and place it on a paper towel-lined plate to drain excess oil. While still hot, drizzle the hot honey sauce generously over the chicken, allowing it to soak in for a few minutes.

                      Garnish and Serve:

                        - Serve the crispy hot honey chicken on a platter, garnished with chopped parsley and sesame seeds if using. Pair with coleslaw, pickles, or over a bed of rice to complete the meal.
