Ingredients

4 boneless, skinless chicken thighs

1/2 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1/4 cup honey

1 tablespoon hot sauce (adjust to taste)

1 teaspoon apple cider vinegar

1/2 cup crumbled feta cheese

Fresh parsley, for garnish

Olive oil for frying

Instructions

Prepare the Chicken:

    - Pat the chicken thighs dry with paper towels. Season with salt and pepper on both sides.

      Breading Setup:

        - In a shallow bowl, combine all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and pepper.

          - In another bowl, whisk the eggs until fully combined.

            - In a third bowl, add panko breadcrumbs.

              Coating the Chicken:

                - Dredge each chicken thigh in the flour mixture, shaking off excess.

                  - Dip into the beaten eggs, allowing excess to drip off.

                    - Finally, coat in panko breadcrumbs, pressing gently to adhere.

                      Frying the Chicken:

                        - In a large skillet, heat about 1/2 inch of olive oil over medium heat.

                          - Once hot, add the breaded chicken thighs in batches, being careful not to overcrowd the pan. Fry for about 5-7 minutes per side or until golden brown and cooked through (internal temperature should reach 165°F / 74°C). Remove and drain on a paper towel-lined plate.

                            Make the Hot Honey:

                              - While the chicken is frying, in a small saucepan, combine honey, hot sauce, and apple cider vinegar over low heat. Stir until warmed through and well combined. Taste and adjust the heat to your preference.

                                Assemble the Dish:

                                  - Once the chicken is ready, drizzle generously with the hot honey mixture. Sprinkle crumbled feta over the top while still hot.

                                    Serve:

                                      - Garnish with fresh parsley and serve with your choice of sides, such as roasted vegetables or a salad.
