8 small flour tortillas

2 cups shredded cheese (cheddar and mozzarella blend works great)

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped red onion

1/2 teaspoon garlic powder

1/2 teaspoon cumin

1/4 teaspoon cayenne pepper (optional for a kick)

2 tablespoons fresh cilantro, chopped

Cooking spray or olive oil for frying

Salsa and sour cream for serving

Instructions
 

In a mixing bowl, combine the shredded cheese, diced bell peppers, chopped red onion, garlic powder, cumin, cayenne pepper (if using), and cilantro. Mix well until the ingredients are evenly distributed.

    Heat a non-stick skillet over medium heat. Spray it lightly with cooking spray or brush with olive oil.

      Place one flour tortilla on the skillet. Sprinkle a generous amount of the cheese mixture on half of the tortilla. Fold the other half over, pressing down gently to seal.

        Cook the quesadilla for about 2-3 minutes, or until the underside is golden brown and crispy. Carefully flip and cook for an additional 2-3 minutes on the other side until crispy and the cheese is melted.

          Remove the quesadilla from the skillet and let it cool slightly on a cutting board. Repeat the process with the remaining tortillas and cheese mixture.

            Once all the quesadillas are cooked, use a sharp knife to cut each one into quarters or small triangles. Serve warm with salsa and sour cream on the side.
