Crispy Onion Scalloped Potatoes

4 large russet potatoes, thinly sliced

2 large onions, thinly sliced

2 cups heavy cream

1 cup shredded sharp cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika

¾ cup panko breadcrumbs

2 tablespoons unsalted butter, melted

Fresh chives, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter or cooking spray.

    In a large skillet over medium heat, add a tablespoon of oil and sauté the sliced onions for about 10-12 minutes, until softened and slightly caramelized. Set aside.

      In a separate mixing bowl, combine the heavy cream, garlic powder, onion powder, salt, black pepper, and smoked paprika. Mix well.

        Layer half of the sliced potatoes in the prepared baking dish, slightly overlapping them. Top with half of the sautéed onions and one third of the shredded cheese.

          Pour half of the cream mixture evenly over the potatoes and onions. Repeat the layering process with the remaining potatoes, onions, and cheese, finishing with a final layer of the cream mixture on top.

            In a small bowl, combine the panko breadcrumbs and melted butter. Sprinkle the breadcrumb mixture evenly over the top of the potatoes.

              Cover the baking dish with aluminum foil and bake for 45 minutes. Then, remove the foil and bake for an additional 30 minutes, or until the potatoes are tender and the top is golden brown and crispy.

                Once done, let it rest for about 10 minutes before serving. Garnish with fresh chopped chives for a pop of color.
