Ingredients

2 cups of crushed Ritz crackers

1 lb boneless, skinless chicken breasts

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 large egg

¼ cup all-purpose flour

Cooking spray or oil for baking

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

Prepare the Chicken: Slice the chicken breasts into thin fillets to help them cook evenly and crisp up nicely.

Marinate the Chicken: In a bowl, combine the buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken fillets to the mixture, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Prepare the Coating: In two separate shallow dishes, place the flour in one and the crushed Ritz crackers in the other.

Coat the Chicken: Remove each chicken fillet from the buttermilk marinade, allowing excess to drip off. First, dredge it in flour, then dip it in the beaten egg (you can whisk the egg in a small bowl), and finally, coat it thoroughly with the crushed Ritz crackers. Press gently to ensure the crackers adhere well.

Arrange on Baking Sheet: Place the coated chicken fillets on the prepared baking sheet. Spray the tops lightly with cooking spray or drizzle with a bit of oil to promote browning.

Bake: Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the crust is golden brown and crispy. The internal temperature should reach 165°F (75°C).

Serve: Remove from the oven and let the chicken rest for a few minutes before serving. Enjoy with your favorite dipping sauce or alongside a fresh salad!
