1 pound large shrimp, peeled and deveined

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1/4 teaspoon salt

1 cup ice-cold water (or sparkling water for extra lightness)

1 teaspoon sesame oil

Vegetable oil for frying

Optional: dipping sauces (soy sauce, tempura dipping sauce, or sweet chili sauce)

Optional: sliced green onions for garnish

Instructions
 

Prepare the Shrimp: Rinse and pat the shrimp dry using paper towels. Make a few shallow slits on the underside of the shrimp to prevent curling during frying.

    Make the Tempura Batter: In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Slowly add the ice-cold water and sesame oil, stirring gently. Be careful not to overmix; the batter should be slightly lumpy for a light texture.

      Heat the Oil: In a deep frying pan or a deep fryer, heat vegetable oil to 350°F (175°C). Ensure there is enough oil for deep frying.

        Fry the Shrimp: Dip each shrimp into the tempura batter, allowing any excess to drip off. Carefully place the battered shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until they golden brown and crispy. Turn occasionally for even cooking.

          Drain and Serve: Once cooked, use a slotted spoon to remove the shrimp from the oil and place them on a paper towel-lined plate to drain excess oil.

            Garnish: If desired, sprinkle with sliced green onions and serve with your choice of dipping sauces.
