1.5 lbs baby potatoes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh herbs (such as thyme, rosemary, or parsley) for garnish

2 tablespoons nutritional yeast (optional, for a cheesy flavor)

Zest of 1 lemon

Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Place the baby potatoes in a large pot and cover them with cold water. Add a generous pinch of salt and bring to a boil over high heat.

      Once boiling, reduce heat and simmer the potatoes for about 15-20 minutes, or until they are tender but not falling apart. You should be able to easily pierce them with a fork.

        Drain the potatoes and let them cool for a few minutes before smashing them.

          Using the bottom of a glass or a potato masher, gently press down on each potato until they are flattened but still intact.

            In a small bowl, combine the olive oil, garlic powder, onion powder, salt, pepper, and nutritional yeast (if using). Brush this mixture generously over each smashed potato.

              Place the smashed potatoes on the prepared baking sheet and roast in the preheated oven for 25-30 minutes or until they are crispy and golden brown.

                In the meantime, prepare a quick herb drizzle by mixing chopped fresh herbs, lemon zest, and a drizzle of olive oil in a small bowl.

                  Once the potatoes are finished roasting, remove them from the oven and let them cool slightly.

                    Drizzle the herb mixture over the crispy smashed potatoes before serving as a flavorful garnish.
