2 cups green cabbage, finely shredded

1 cup carrots, grated

1/2 cup green onions, chopped

1/2 cup all-purpose flour

1/2 cup breadcrumbs (for extra crunch)

2 large eggs

1 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Vegetable oil for frying

For the Garlic Sauce:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt to taste

In a large bowl, combine the finely shredded cabbage, grated carrots, and chopped green onions. Mix well.

    In a separate bowl, whisk together the flour, breadcrumbs, baking powder, garlic powder, smoked paprika, salt, and pepper.

      Beat the eggs in another bowl, then add them to the vegetable mixture, followed by the dry ingredients. Stir until everything is thoroughly combined.

        Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.

          Once the oil is hot, scoop a tablespoon of the fritter mixture and gently drop it into the oil. Flatten slightly with the back of a spatula. Repeat until the skillet is filled (but not overcrowded).

            Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy. Remove them and place them on a paper towel-lined plate to drain excess oil.

              While the fritters are cooking, prepare the garlic sauce by mixing mayonnaise, minced garlic, lemon juice, and salt in a small bowl. Adjust seasoning if necessary.

                Serve the crispy cabbage fritters hot with a generous dollop of garlic sauce on the side.
