2 lbs beef sirloin or chuck roast, cut into bite-sized pieces

1 tablespoon olive oil

1 onion, chopped

4 cloves garlic, minced

1 cup beef broth

1 cup red wine (or additional beef broth)

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons cornstarch (optional, for thickening)

2 tablespoons cold water (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Add the beef pieces and sear them until browned on all sides. This step is optional but adds depth to the flavor.

    Transfer the beef to the crock pot. In the same skillet, add the chopped onion and garlic, sautéing until the onion is translucent.

      Pour the beef broth and wine into the skillet, scraping the bottom to release any browned bits. Stir in Worcestershire sauce, soy sauce, thyme, rosemary, paprika, salt, and pepper.

        Pour the mixture over the beef in the crock pot. Stir to combine all the ingredients well.

          Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender and the flavors meld.

            If you'd like a thicker gravy, mix cornstarch and cold water in a small bowl until smooth. Add the mixture to the crock pot and stir well. Cook on high for an additional 30 minutes or until the gravy thickens to your desired consistency.

              Serve the beef tips over mashed potatoes, rice, or noodles, garnished with fresh parsley.
